One of the things we really enjoyed when we stayed at a parador in Cordoba was this Spanish dish for breakfast.
Use tinned tomatoes and pour into a shallow dish with two cloves of chopped garlic, a twist of salt and a grind of pepper. Pour good olive oil over the top and leave at least overnight in the fridge to chill.
For breakfast griddle or toast some good chunky slices of bread and then spoon over the tomato.
Must be eaten in sunshine!
