The recent sun brought on the pot basil big style, so it would be a shame not to use it in that most maligned sauce, pesto.
A simple few minutes in a food processor with garlic, salt and pine nuts, gives you a wonderful peppery taste that is nothing like a jar sauce. Sauce from a jar can be OK, it’s only when you taste the real thing that you get the “hit” of the fresh garlic and basil on your tongue.
Turn the parmigiana in by hand for best results and look at that colour!!
