Terrines and Verrines

I have a new book which is proving inspirational but sometimes difficult to master. However my wife wants healthy tonight so I’m going to try a veggie stack in a 4″ring, using mashed potato mixed with fried onion as the base, followed by wafer thin tomatoes, then char grilled asparagus, held together by vege gel.

OK here’s the picture. I’m pleased with this,served with Parmesan biscuits, it’s a treat of a starter.
